Coconut Milk Medley

5 cups coconut milk or 1 can (12 oz.) frozen coconut milk, thawed plus 4 cups water
1 medium sweet potato
2 taro root or yam
2 ripe plantin bananas
1/2 cup preserved jackfruit, drained and cut into strips
2 tbsp. quick cooking tapioca
1/2 cup sugar

1.  Bring coconut milk (or thawed grozen coconut milk plus water) to a simmer over moderate heat, Stir occasionally to prevent cudling.
2.  Meanwhile peel sweet potato, taro or yam and plantin bananas, cut into cubes, add to simmering coconut milk and cook 20 minutes or until sweet potato and taro are done.
3.  Add jackfruit strips, sugar and tapioca.  Stir to dissolve sugar.  Cook for 5 minutes more.


Preparation tim: 10 minutes
Cooking time: 30 minutes
Serves 6 to 8

BUTTER TART PIE

3 eggs
3/4 cup packed brown sugar
3/4 cup corn syrup
3 Tbsp melted butter
4 tsp flour
1 1/2 tsp vanilla
1/4 tsp salt
2 1/4 cups raisins
9 inch pie shell, unbaked

Beat eggs lightly.  Stir in other ingredients, adding raisins last.  Pour into pie shell.  Bake at 400 degrees F fot 5 minutes, then reduce heat to 350 degrees F and bake 35 minutes more, or until center is just firm to touch.  Serve with whipped cream or ice cream if desired.


Homemade Taho (Tofu Dessert)

22 ounces extra soft tofu
1 ¼ cup brown sugar
½ cup uncooked tapioca pearls
4 ½ cups water

Procedure:
1. Pour 4 cups of water in a cooking pot and bring to a boil.
2. Put-in the tapioca pearls and cook for 40 minutes in medium heat.
3. Add ¼ cup brown sugar and mix well.
4. Turn off the heat and let the tapioca pearls sit on the cooking pot until room temperature is achieved. Set aside.
5. Heat a saucepan then pour-in ½ cup of water.
6. Put-in 1 cup of brown sugar once the water starts to boil. Mix well and simmer for 1 minute. Set aside.
7. Transfer the extra soft tofu in a glass or mug then heat in a microwave oven for a minute.
8. Top the extra soft tofu with the cooked tapioca pearls and sweet syrup.
9. Serve warm. Share and Enjoy!


APPLE COFFEE CAKE

1 1/3 cups flour
3/4 cup sugar
3 tsp baking powder
1/4 cup margarine
1 egg, beaten
3/4 cup milk
1 tsp vanilla
2 apples, sliced
1/3 cup brown sugar
1/2 tsp cinnamon

Put flour, sugar and baking powder in a large bowl.  Cut or rub in margarine until crumbly.  Make a well in the center.  In small bowl beat egg until frothy, mix in milk and vanilla.  Add to well just enough to moisten.  Pour into greased cake pan.  Push apples well into batter close together.

Topping:  Mix together and sprinkle over top.  Bake at 350 degree F for 50 to 60 minutes.
